Vegetable Kugel
A great alternative to potato kugel! This kugel has carrots, zucchini, a few potatoes, an onion, oil, a bit of flour, eggs, salt, and pepper. So delicious.

- 4 big carrots, washed and peeled
- 1 small onion, peeled
- 3 potatoes, washed and peeled
- 3 zucchinis, washed, not peeled
- 4 eggs
- 1/4 cup flour
- 3/4 cup oil
- 3/4 tablespoon salt
- 1/4 teaspoon black pepper
Preheat oven to 350 degrees.
Mix the eggs, oil, flour, salt, and black pepper well in a big bowl.
Add a few of the vegetables at a time to a food processor and process them using a medium-sized shredding blade.
Once the vegetables are shredded add them to the bowl with the egg mixture and mix really well.
Pour into a lightly greased 9x13 baking dish or aluminum foil pan, and bake for one hour.
To refrigerate:
Cover tightly and refrigerate for around five days.
To freeze:
Cover with plastic wrap and then foil or a container cover and freeze for up to three months.
