Are you ever bored of potato kugel but still want a kugel? If so, this is just the thing you are looking for. Growing up when I smelled this I knew it was Yom Tov. It is so good that you have to double the recipe – I can polish off a pan myself! There is something about the combination of these specific vegetables mixed with a bit of oil and eggs that makes it so flavorful. It’s colorful, healthy, and easy to make.

The steps are simple:
Like potato kugel, this recipe will use a food processor and I like to use the shoestring blade, which is the blade that shreds the vegetables into medium-sized strings. You can of course use any blade you like to create any preferred texture.
Because potatoes tend to turn brown if they are out for too long once being peeled, prepare everything before beginning to put the vegetables through the food processor. Mix the oil, eggs, and spices in a bowl. Once the vegetables are shredded add them to the bowl and mix everything well.
To make vegetable kugel healthier:
Although this recipe is pretty healthy there are a few things you can do to make it even healthier. I used whole wheat flour and couldn’t tell the difference. The same goes for olive oil or any healthy oil alternative. You can also use three eggs instead of four.
Variations and substitutes:
I’ve only made this recipe with these vegetables but feel free to use or try other things. Some ideas that come to mind are:
- Sweet potatoes
- Spinach
Freeze it for later:
This is a great recipe to make in advance as it freezes well. You can prepare it and bake it the day you are serving it, or you can cook it in advance and just reheat it when you are ready. Make sure to warm it up for a while so that the inside gets warm too. If you are freezing it before cooking then give it an extra hour to cook.
You can freeze these into small individual portions and just grab some from the freezer if you ever need a quick side dish. It will come in handy!

- Whole roast chicken and white rice
- Soft and juicy top of the rib and orzo

Ingredients
- 4 big carrots, washed and peeled
- 1 small onion, peeled
- 3 potatoes, washed and peeled
- 3 zucchinis, washed, not peeled
- 4 eggs
- 1/4 cup flour
- 3/4 cup oil
- 3/4 tablespoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 350 degrees.
- Mix the eggs, oil, flour, salt, and black pepper well in a big bowl.
- Add a few of the vegetables at a time to a food processor and process them using a medium-sized shredding blade.
- Once the vegetables are shredded add them to the bowl with the egg mixture and mix really well.
- Pour into a lightly greased 9×13 baking dish or aluminum foil pan, and bake for one hour.

To make this recipe during the year you can use regular flour, and to make it for Pesach you can use either potato starch, matzah meal, or matzah cake meal.
