Green Smoothie Muffins

If you prefer a muffin over a smoothie but want to get your greens in, this recipe is for you. All it requires is adding everything to a food processor and blending it!

Ingredients

  • 1 large banana
  • 2 cups fresh spinach
  • 3/4 cup skim milk
  • 1/4 cup honey
  • 2 tablespoons extra virgin olive oil
  • 2 egg whites
  • 1 teaspoon vanilla extract
  • 1 cup old-fashioned oats
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 cup whole wheat flour

Instructions

  • Add all of the ingredients to a food processor and blend until well combined.
  • Preheat oven to 375 degrees.
  • Spray a muffin tin with a non-stick olive oil spray.
  • Pour the batter into each muffin cup and bake for around 20 minutes.
  • Allow the muffins to cool before serving.

Notes

These green smoothie muffins can be kept in the refrigerator for up to four days and frozen for around three months. 
Because of the fresh milk in these muffins, they shouldn't be kept at room temperature for longer than two hours.
