If you’re adding both chocolate chips and nuts use about 1/4 cup of each. If you’re only adding one of them use 1/3 cup of the one you’re adding.

Being that this cake has no dairy in it, it can be stored at room temperature for around three days. After that it’ll start losing it’s moisture unless it’s frozen.

To freeze it, we recommend slicing it into individual pieces and placing them in airtight containers or Ziplock bags.

Defrost the cake for a few hours at room temperature before eating it.

Ingredients

  • 2 eggs
  • 3/4 cup sugar
  • 1/2 cup olive oil
  • 1 1/4 teaspoon baking soda
  • 1 1/4 teaspoon hot water
  • 1/2 teaspoon vanilla
  • 1/2 cup water
  • 1 mashed banana
  • 1 1/4 cups flour

Instructions

  • Preheat oven to 350 degrees.
  • Add the eggs and sugar to a medium-sized bowl and mix using a hand mixer.
  • Add the olive oil and continue beating until well combined.
  • Mix the hot water and baking soda in a small bowl or cup and add it to the egg mixture.
  • Add the mashed banana, water, and vanilla and beat until combined.
  • Slowly add the flour to the liquid mixture and continue beating until everything is mixed well.
  • Transfer the batter to an 8X8 baking dish.
  • Bake for around 40 minutes or until you insert a toothpick and it comes out clean.

Notes

You can store this dairy free banana cake at room temperature for around three days. It can be frozen for around three months.
