Almond Butter Truffles


These almond butter truffles are rich and decadent. They have a few simple ingredients and don’t even need to be baked. Try them, they’ll become a dessert staple!

Aside from not having to bake these, you don’t even have to do too much for them at all. The freezer does most of the work. It hardens the almond butter balls, the chocolate coating, and the chocolate drizzle.

If you love a mix of textures you’ll love how the gooey inside of these truffles is slightly smoother than the chocolaty outside. Biting into them is delightful!

  • Almond butter
  • Almond flour
  • Maple syrup
  • Chocolate chips
  • Vanilla
  • Salt
  • Oil

the steps:

Mix all of the ingredients for the almond butter mixture.

Roll them into balls and place on a baking sheet.

Freeze the almond butter balls for 30 minutes.

Melt the chocolate.

Reshape the balls into truffles and dip them in the chocolate.

Freeze for 15 minutes.

Drizzle more chocolate over the truffles.

Freeze for another 15 minutes.

If you have a microwave then microwaving the chocolate with a little bit of oil is your best option. It’s quick and easy. If you don’t have a microwave then a double boiler is another option.

A double boiler is a glass or metal bowl sitting over a pot of boiling water. The heat from the boiling water rises and melts the chocolate. Just make sure the water isn’t touching the bottom of the bowl otherwise the chocolate will burn.

1. Use a small slotted spoon:

This small slotted spoon is a great tool when coating something small with chocolate. Your hands won’t get dirty and you’ll get the truffle safely from the chocolate onto the baking sheet.

2. There are a few options for the chocolate drizzle.

You can skip it as it’s simply decorative. If you do choose to do it you can use either a spoon or a piping bag.

Ingredients

  • 1/2 cup almond butter
  • 1/3 cup almond flour
  • 1/4 cup maple syrup
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon salt
  • 6 ounces chocolate chips
  • 1 tablespoon olive oil

Instructions

  • Add the almond butter, almond flour, maple syrup, vanilla and salt to a bowl and mix well.
  • Roll into balls and place on a lined baking sheet.
  • Freeze for 30 minutes.
  • Meanwhile, add the chocolate and olive oil to a bowl and melt using a microwave or double boiler.
  • Remove the almond balls from the freezer and shape them into truffles.
  • Using a small slotted spoon dip each truffle into the chocolate and place it back onto the baking sheet.
  • Once all of the truffles are coated in chocolate place them in the freezer for 15 minutes.
  • Meanwhile, place the rest of the chocolate into a piping bag.
  • Remove the truffles from the freezer. Drizzle the remainder of the chocolate from the piping bag onto the truffles in a zigzag motion.
  • Freeze for another 15 minutes.

Notes

These almond butter truffles are best stored in the freezer where they will stay fresh for around three months. 
Let them sit at room temperature for around 10 minutes before eating for the best texture.
