Brownies… must We say more?

Raise your hand if your face lights up when you hear the word brownies.

Mine does! Every time.

Those of us brownie lovers know what I am talking about. There’s just nothing like them. The gooey, warm, chocolaty goodness is pure heaven. It’s the perfect dessert, snack, or treat anytime!

The problem is that so many brownies are loaded with sugar and aside from not being healthy, it takes away from the rich taste that a brownie should have.

In come these brownies. They will satisfy your cravings, and taste better than regular brownies! You won’t feel like you’re missing out on dessert or chocolate at all. Adding chocolate chips and healthy sweeteners makes this a go-to treat for anybody trying to stay away from sugar while still enjoying a brownie.

The chocolatier the better!

These brownies are definitely what you might call a “double chocolate treat” because they have cocoa powder and chocolate chips. That may sound like a lot, but in my book, there is no such thing as too much chocolate!

You can cut down the added chocolate if you’d like. In addition, you can add the chocolate to either the batter or the top, you don’t need to add it to both.

A great thing about this recipe is how simple it is to make. You can use one bowl for everything and mix it with a spoon. The method of mixing the wet and dry ingredients separately can be used here but does not have to be. It’s a matter of preference, so you can try both and decide which one you like better.

My problem with healthy brownies in the past was that they were too dense and lacked the moist element that makes brownies so good. The trick to making them light and airy is adding more liquid ingredients that go well together. The ratio of dry to wet ingredients becomes more equal which makes a big difference.

I have made these brownies so many different ways – it all depended on the ingredients I had on hand.

Some variations that you might want to try:

  • We used coconut flour and loved it, but use whatever flour you’re comfortable with. Regular and whole wheat will work as well.
  • Use a sweetener that you are comfortable with. Agave, honey, and brown sugar will work. If you want to use regular sugar use half of what the recipe calls for and that should be enough.
  • As you can see, all I had on hand was strawberry applesauce and it worked! You can use regular applesauce, but I’ve even used frozen fruit like a banana or berries when I was out of applesauce and it still came out perfect!
  • You can use butter, regular oil, coconut oil, etc.
  • You can use any chocolate you like. For the chocolate chips, I just chopped up a bar of chocolate.

You get the idea – make it your own and don’t be afraid to play around and try different versions.

  • Warm them up and have them with a cup of tea in the winter.
  • Enjoy them with an iced coffee as a snack in the summer.
  • Serve them as dessert with fruit.


Don’t forget the ice cream!

Like our grandmother always says when you serve her a brownie: “You know what you need with this? A scoop of vanilla ice cream.” And she’s right! Ice cream makes everything better, especially brownies! You can choose regular ice cream, a healthy version of ice cream (there are so many these days!), or even sorbet.

Ingredients

  • 1/2 cup olive oil
  • 1/2 cup maple syrup
  • 1/2 cup unsweetened applesauce
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup chocolate chips

Instructions

  • Preheat the oven to 350 degrees. Mix the olive oil, maple syrup, eggs, vanilla extract, and applesauce in a big bowl.
  • Mix the coconut flour, cocoa powder, salt, baking soda, and chocolate chips in a bowl.
  • Add the dry ingredients slowly into the liquid bowl while mixing well.
  • Pour the batter into a coated 8×8 baking dish.

  • Bake for 25-30 minutes and adjust according to the consistency you like. For really gooey brownies bake them for shorter and for a thicker consistency bake them for longer.

To store at room temperature:
Seal in an airtight container or cover tightly with plastic wrap or foil for up to four days.
To freeze:
Wrap them individually in plastic wrap or cover them tightly and freeze for up to four months for the best results.
