Yes, if I had to choose my favorite vegetable it would definitely be sweet potatoes.

Sometimes I wonder how such a sweet and delicious food can be a vegetable. It almost tastes like candy.

As sweet potatoes roast, they become sweeter, and sometimes the edges will even caramelize and look like a cooked brown sugar sauce. It’s magic if you ask me.

There are so many different ways to cook sweet potatoes. Roasting them seems to be a lot of people’s favorite, but you can also bake them whole, or boil them and turn them into mashed sweet potatoes.

Another great idea is sweet potato fries, or cutting them into really small cubes before roasting them and then adding them to salads. If you boil them and mash them they can serve well as baby food too.

There’s no shortage of meals that you can add roasted sweet potatoes to, and they’re a great staple to have on hand. I find that different meals go with different kinds of cooking techniques, but one thing is for sure, I never get bored of them!

Ingredients

  • 3 sweet potatoes
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 400 degrees.
    Wash and peel your sweet potatoes. Slice them into thin rounds about 1/4 inch.

  • Place sweet potatoes in a bowl and drizzle with olive oil, salt, and pepper.

  • Arrange the sweet potatoes on a lined baking sheet.

  • Roast for 20 minutes or until the edges are golden brown.
  • Remove from the oven and turn the sweet potatoes over with a pair of tongs.

  • Roast for another 20 minutes or until both sides are golden brown.
  • Try slicing through one of the sweet potatoes to see if they are ready. If they are still hard, cover them with a piece of foil, lower the temperature to 350 degrees, and continue roasting for another 20 minutes or until they are soft.

Notes

Make sure to store your sweet potatoes in a way that won’t get soggy. You can do this by placing them in a container with a tight lid, or wrapping them in parchment paper and then in foil. 
You can store them in the refrigerator for around four days or freeze them for around two months.
