Can you even eat breakfast sitting down?

When I think about breakfast I usually think about grabbing fruit and some nuts. Or maybe a muffin that I batch cooked and had in the freezer. I most certainly never think about taking out a fork and knife and sitting down! I mean, who has time for that? I wish. Running out to work every morning makes that pretty impossible.

One time on the weekend though I decided to try it out. After all, I love breakfast and always want to try new things. And I have to say I loved it! There is something peaceful about having this nice decadent brunch plate in the morning and starting the day on a calm note. I’m going to be doing it more and recommend you try the same.


Now we take breakfast very seriously around here!

I find that when I eat a filling and nutritious breakfast the entire day is set up to go smoothly (in terms of eating at least :)). I don’t feel the need to snack, I don’t get crazy hungry, and I tend to make better food choices during the rest of the day. It’s pretty psychological but when you make one good decision you most likely will continue to do so throughout the day!


How to make this brunch plate:

The great part is there is no exact recipe. The idea is a few things:


Choose a carb:

  • Toast, a wrap, a bagel, rice cakes, crackers, matza, or an English muffin.


Pick some protiens:

  • Eggs, smoked salmon, cheese, or cottage cheese.


Add some healthy fats:

  • Avocado, nut butters, or seeds.

More serving suggestions:

This plate is kind of like a deconstructed toast but you can top the toast with all of this goodness and enjoy it that way. Some other things I’ve added to this meal are nuts, fruits, fresh veggies, and of course – a delicious drink! I mean – what is breakfast without an awesome beverage? You can have anything from a green smoothie to a refreshing cup of orange juice or (my favorite) a delicious cup of coffee.

If you’re a hot sauce lover go ahead and pour some on top! Make this your favorite meal and add whatever you like to it.


Breakfast for Dinner!

If this idea sounds tempting but you don’t think it will work for breakfast, you can absolutely turn it into dinner. Lots of people do “breakfast for dinner” these days and why not! It’s kid-friendly (kind of looks like a smiley face because of the fried eggs), and it’s light and easy. You can add a green salad on the side or even a piece of salmon.

Variations and Substitutes:

  • If you don’t have the time or patience you don’t need to cut up the avocado in a fancy way. Just scooping it out will do!
  • If you want to skip the carbs you can; just make sure to have something filling like nuts and fruits instead.
  • Skip the butter if you’re not interested in extra fattening calories. You can top the toast with avocado instead.

Ingredients

  • 8 fried eggs (sunnyside up)
  • 2 avocados sliced however you'd like
  • 8 ounces smoked salmon (lox)
  • 8 pieces of toast
  • Butter for the toast (optional)

Instructions

  • Fry up your eggs.

  • Slice up the avocados by cutting the avocado in half, taking out the pit, and thinly slicing strips across.

  • Peel off the skin from the strips of avocado.

  • Place your lox, avocado, and eggs on a big plate. Add your toast and butter.

Notes

To pack this up to go:
Instead of frying your eggs hard boil them. This way they can last in the fridge for a week and can be made ahead of time. You can pack everything up in a container with a piece of bread and take it with you.
