Ingredients

  • 1 big bunch of kale
  • 1 cup tri-colored quinoa
  • 4 ounces feta cheese, crumbled
  • 1 big sweet potato, cubed
  • 1/3 cup slivered almonds
  • 1/3 cup dates, chopped
  • Olive oil for massaging the kale
  • 1/2 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • Dash of black pepper

Instructions

For the quinoa:

  • Bring a medium-sized pot of water to a boil.
  • Add the quinoa, cover the pot, and lower the flame.
  • Cook for 15 minutes or until all of the water is absorbed.
  • Let it sit for 10 minutes and then fluff it with a spoon.

For the roasted sweet potatoes:

  • Place the cubed sweet potatoes on a lined baking sheet and drizzle them with olive oil.
