Recipes for Sukkot 2024

Sukkot 2024 falls out on Thursday, October 17. Sukkot is a Jewish holiday that celebrates the protection the Jews had when they left Egypt. As with any holiday, we need some amazing food!

We wanted to share some festive recipes to help you prepare for this beautiful time.

We tried to highlight traditional foods that are eaten on Sukkot like stuffed cabbage and foods that are wrapped in something like deli roll and truffles. In addition, we included some generally festive dishes like roast and kugel.

These recipes serve around six people but you can double or halve them as needed.

Delmonico roast:

Ingredients:

  • 1.5 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 3 pounds Delmonico roast


Instructions:

  1. Preheat oven to 350 degrees.
  2. Place the roast in an oven-safe baking dish.
  3. Mix all of the spices together in a small bowl.
  4. Rub the spices all over the roast well.
  5. Cover and bake for around 1.5 hours or until a thermometer reads your desired temperature; 135F for medium-rare, 165F for well done.


stuffed cabbage:

Stuffed Cabbage in Healthy Sukkos Meal Plan


Ingredients:

For the meat:

  • 2 pounds ground meat
  • 1 onion, grated
  • 1/4 cup uncooked rice
  • 2 eggs
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 head of cabbage


for the sauce:

  • 2 cans tomato sauce (15 ounces each)
  • 3/4 cup light brown sugar


Instructions:

  1. Place the cabbage in a big saucepot and cover with water.
  2. Bring to a boil and cook until the cabbage softens, around 30 minutes.
  3. Meanwhile, mix all of the ingredients for the meat mixture in a bowl.
  4. Once the cabbage has finished cooking, drain the water from the pot and allow the cabbage to cool completely.
  5. Preheat oven to 350 degrees.
  6. Gently peel off pieces from the cabbage.
  7. Place a few spoonful’s of the meat mixture into the cabbage and roll it up tightly.
  8. Place in a baking dish and repeat until you’ve finished the meat mixture.
  9. In a medium-sized bowl, add all of the ingredients for the sauce.
  10. Pour sauce over the stuffed cabbage and cover tightly with foil.
  11. Bake for around two hours or until the meat is tender and the cabbage is baked through.
  12. Top with some extra parsley.


vegetable kugel:

Ingredients:

  • 4 big carrots, washed and peeled
  • 1 small onion, washed and peeled
  • 3 potatoes, washed and peeled
  • 3 zucchinis; washed, not peeled
  • 4 eggs
  • 1/4 cup flour
  • 3/4 cup olive oil
  • 3/4 tablespoon salt
  • 1/4 teaspoon black pepper


Instructions:

  1. Preheat oven to 350 degrees.
  2. Mix the eggs, oil, flour, salt and pepper in a big bowl.
  3. Add a few of the vegetables at a time to a food processor and process them using a shredding blade.
  4. Once the vegetables are shredded, add them to the bowl with the egg mixture.
  5. Mix everything well with a spatula.
  6. Pour the mixture into a lightly greased 9X13 baking dish or aluminum foil pan, and bake for one hour.


Colorful Quinoa Salad:

Ingredients:

For the salad:

  • 2 cups quinoa
  • 4 cups water
  • 1/2 red pepper, chopped
  • 1/2 yellow pepper, chopped
  • 4 scallions, sliced
  • 1/3 cup dried cranberries
  • 1/3 cup sliced almonds
  • 1 tablespoon chopped parsley


For the dressing:

  • 1/3 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 clove of garlic
  • 2 teaspoons lemon juice
  • 1 tablespoon honey
  • 1/2 teaspoon salt


Instructions:

For the quinoa:

  1. Bring 4 cups of water to a boil.
  2. Add the quinoa and cook for 15 minutes or until all the water has been absorbed.
  3. Fluff with a spoon and set aside.


For the salad:

  1. Place the cooked quinoa in a bowl.
  2. Top the salad with the peppers, scallions, almonds and cranberries.
  3. Mix the ingredients for the dressing and pour them over the salad.


Turkey Pastrami deli roll:

ingredients:

  • 2 packages frozen puff pastry
  • 3/4 pound sliced turkey
  • 3/4 pound sliced pastrami
  • 1 egg
  • 1 tablespoon sesame seeds


instructions:

  1. Preheat the oven to 380 degrees Fahrenheit.
  2. Roll out the defrosted pastry dough with a rolling pin.
  3. Place the dough on a lined baking sheet.
  4. Place the different kinds of deli on one side of the dough.
  5. Fold the empty side of the dough over the full side.
  6. Pinch the ends of the pastry dough closed with a fork.
  7. Brush the deli roll with an egg.
  8. Make a few slices through the top of the deli roll with a knife.
  9. Sprinkle sesame seeds on top of the deli roll.
  10. Bake for around 18 minutes or until the dough is golden brown.


Almond butter truffles:

Ingredients:

  • 1/2 cup almond butter
  • 1/3 cup almond flour
  • 1/4 cup maple syrup
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon salt
  • 6 ounces chocolate chips
  • 1 tablespoon olive oil


Instructions:

  1. Add the almond butter, almond flour, maple syrup, vanilla and salt to a bowl and mix well.
  2. Roll into balls and place on a lined baking sheet.
  3. Freeze for 30 minutes.
  4. Meanwhile, add the chocolate and olive oil to a bowl and melt using a microwave or double boiler.
  5. Remove the almond balls from the freezer and shape them into truffles.
  6. Using a small slotted spoon dip each truffle into the chocolate and place it back onto the baking sheet.
  7. Once all of the truffles are coated in chocolate place them in the freezer for 15 minutes.
  8. Meanwhile, place the rest of the chocolate into a piping bag.
  9. Remove the truffles from the freezer. Drizzle the remainder of the chocolate from the piping bag onto the truffles in a zigzag motion.
  10. Freeze for another 15 minutes.


dairy free banana cake:

Dairy Free Banana Cake


Ingredients:

  • 2 eggs
  • 3/4 cup sugar
  • 1/2 cup olive oil
  • 1 1/4 teaspoons baking soda
  • 1 1/4 teaspoons hot water
  • 1/2 teaspoon vanilla
  • 1/2 cup water
  • 1 mashed banana
  • 1 1/4 cups flour


Instructions:

  1. Preheat oven to 350 degrees.
  2. Add the eggs and sugar to a medium-sized bowl and mix using a hand mixer.
  3. Add the olive oil and continue beating until well combined.
  4. Mix the hot water and baking soda in a small bowl or cup and add it to the egg mixture.
  5. Add the mashed banana, water, and vanilla and beat until combined.
  6. Slowly add the flour to the liquid mixture and continue beating until everything is mixed well.
  7. Transfer the batter to an 8X8 baking dish.
  8. Bake for around 40 minutes or until you insert a toothpick and it comes out clean.


Notes:

The roast, stuffed cabbage, vegetable kugel, and deli roll can be refrigerated for three days and frozen for around two months.

The salad will stay fresh in the fridge for up to four days.

The truffles should be kept in the freezer and defrosted 10 minutes before serving.

The banana cake can be kept at room temperature for around three days and frozen for around two months.
