Ingredients

For the Sweet Mushrooms:

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 pound mushrooms, washed and sliced
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup honey
  • 2 teaspoons corn starch

For the Fried Halloumi:

  • 1 tablespoon olive oil
  • 1 pound halloumi cheese, sliced

For the Salad:

  • 1 pound romaine lettuce, washed and chopped
  • 1 cup sundried tomatoes
  • 2 avocados, diced
  • 1 cup cashews

For the Dressing:

  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

For the Sweet Mushrooms:

  • Add olive oil to a non-stick pan and heat it up on a medium flame.
  • Add the onions and mushrooms and sauté for around five minutes.
  • Meanwhile, mix the soy sauce, honey, and sesame oil in a small bowl.
  • Pour the mixture over the mushrooms and bring to a boil.
  • Lower the flame and continue cooking for around 20 minutes or until the mushrooms are soft and have absorbed the sauce. Mix well from time to time.

For the Halloumi Cheese:

  • Heat olive oil in a non-stick pan on a medium flame.
  • Fry the halloumi cheese until it's golden brown; around two minutes per side.

To Assemble the Salad:

  • Place the lettuce in a big bowl.
  • Add the sundried tomatoes, cashews, and avocado.
  • Add the halloumi cheese. You can chop the halloumi into bite-sized pieces at this point if you'd like.
  • Add the avocado, sweet mushrooms, and dressing right before serving and mix well.

Notes

To keep the salad fresh for multiple days keep the liquid components separate until you’re ready to serve it again.
Everything will stay fresh in the fridge for around three days.
