Ingredients

  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 tablespoons milk
  • 2 tablespoons olive oil
  • 1/2 cup almond flour
  • 1 tablespoon coconut flour
  • 1 tablespoon brown sugar
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup fresh blueberries
  • Maple syrup for serving

Instructions

  • Whisk the eggs together.
  • Add the rest of the ingredients one at a time, mixing as you add them.
  • Add a little bit of butter or olive oil to a non-stick pan and heat it on a medium flame.
  • Once the pan is hot add the pancake mixture by spooning in around two tablespoons of batter at a time.
  • Cook for around two minutes, flip, and cook for another two minutes.
  • Place onto a plate and drizzle maple syrup over them.
  • Add your favorite berries and serve!

Notes

You can keep these easy & delicious Passover pancakes in the fridge for around four days.
They can be frozen for around two months.
