Ingredients

  • 1 tablespoon olive oil
  • 1/4 small onion, diced
  • 1/2 red pepper, diced
  • 1/4 cup mushrooms, chopped
  • 1 cup fresh spinach, chopped with stems removed
  • 2 eggs
  • 1 egg white
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions

  • Heat oil in a 10-inch skillet over a medium flame and spread it in the pan using a basting brush.
  • Add the onions, spinach, peppers, and mushrooms.
  • Mix well and add salt, pepper, and garlic powder.
  • Cook for around five minutes or until the vegetables are soft and have caramelized a bit.
  • Remove the vegetables from the pan.
  • Add a little bit more oil to the pan.
  • Beat the eggs and add them to the pan.
  • Cook for around one minute and then add the vegetable mixture to one side of the omelet.
  • Once the eggs have firmed up a bit fold them over the vegetables.
  • Flip the omelet and cook for an additional minute.
  • Top with parsley and serve.

Notes

Although this omelet is best when served fresh, it can be refrigerated for up to three days. To warm it up just microwave it for a minute or two.
