These heavenly rolls are a real treat. They have the homemade element which makes everything better, and they’re filled with flavor. They smell like butter when they’re baking even though they’re dairy-free, and it’s almost hard to believe that they’re healthy. If you’ve always wanted to make whole wheat bread or rolls but never had the right recipe, here is your chance!


Whole wheat flour vs. regular flour

You might ask if these are that much healthier than regular rolls. And the answer is yes! Healthy doesn’t necessarily mean fewer calories because in reality whole wheat flour only has around 50 calories less per cup than white flour. But it is still better for you because the original stalk of grain wasn’t processed and stripped from all of its nutrients.

Eating whole wheat flour over regular flour as often as possible is a great idea. I think the main difference between the two is how much more full whole wheat flour leaves you. And this is the diet and weight loss part – the fuller you are after a meal the less likely you are to make bad food choices for the rest of the day.

  • White whole wheat flour – I find this one to be less dense but you can use any whole wheat flour.
  • Warm water – the temperature should be around 105 degrees.
  • Egg
  • Honey – or any sweetener you’d like.
  • Salt
  • Olive oil – or any oil you have or want to use.

You can double the recipe and use a mixer:

This is a smaller recipe but you can double or triple it and use a machine. You can’t go wrong with doubling this recipe – they are always handy to have in the freezer. If you are using a mixture start with adding half of the flour into the bowl and then slowly add the water and yeast followed by the rest of the ingredients.


Get them fluffier by putting them in a cold oven.

I tried this out a few years ago with my regular challah roll recipe and it worked so well! By turning the oven on once the rolls are in there, it’s as if you allow them to rise a third time and this makes them even fluffier. They also bake slower this way, and low and slow is always a win!

Remember that all ovens are different, and you can try different settings and times to get the rolls the way you like them. You can bake them at 400 degrees for around 15 minutes for a fast and high bake. You can also do half the time at a lower temperature to get the perfect crust on the outside while making sure they are still soft on the inside.

If you see that the rolls have browned enough on the outside but don’t think they finished baking on the inside, you can cover them with foil and continue baking them for a little longer.

Ingredients

  • 4 cups white whole wheat flour (or half regular flour, half whole wheat flour)
  • 3/4 tablespoon yeast
  • 1.5 cups warm water
  • 1 egg
  • 1 tablespoon olive oil
  • 1/2 tablespoon salt
  • 1/4 cup honey
  • 1 tablespoon sesame seeds (optional)

Instructions

  • Add the flour, yeast, and water to a bowl and mix to combine.
  • Add the honey, egg, olive oil, and salt.
  • Knead the dough for around five minutes or until it becomes smooth.

  • Leave it at a warm temperature and let it rise for about one hour or until it doubles in size.
  • Divide the dough into 12 pieces and roll out each piece.

  • Preheat oven to 350 degrees.
  • Cover them and let them rise for another hour or until they double in size.
  • Brush the rolls with an egg wash.
  • Sprinkle them with sesame seeds (if using).
  • Bake for around 25 minutes or until the tops are golden brown.
  • Warm up before serving and drizzle with honey.

Notes

To store at room temperature:
Seal tightly in a plastic bag or container and leave on the counter for up to four days. 
If you know you will be freezing some, do it right away to preserve the freshness.
These freeze beautifully for around three months.
