Ingredients

  • 1 head of green cabbage, cut into chunks
  • 1 onion, sliced into half rings
  • 1/4 cup olive oil
  • 1/3 cup vegetable broth
  • 1/3 cup water
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup dried cranberries (optional)

Instructions

  • Heat half of the olive oil in a big frying pan. The cabbage should be cooked in two batches or using two frying pans because one pan won't fit an entire cabbage.
  • When the oil is hot add the amount of cabbage that will fit in the pan, and season with half the salt and pepper.
  • Cover the pot and let the cabbage cook until the bottom has browned; around six minutes.
  • Flip the cabbage over carefully using a pair of tongs.
  • Add half the onions and let them fry for around five minutes, mixing them from time to time.
  • Add half the broth and water, mix everything well, and cover the pan.
  • Simmer for around 30 minutes or until the cabbage is caramelized and the water has evaporated.
  • Place the cooked cabbage on a lined plate to cool off.
  • Heat the rest of the olive oil in the same pan and repeat the process with the rest of the ingredients.
  • Top the cabbage with dried cranberries for an extra pop of color.

Notes

The cabbage can refrigerated for around three days. To reheat it place it in a 250-degree oven for around 25 minutes.Β
