In this recipe, we used this stainless steel skillet with a cover. If you prefer a non-stick pan with a cover, this one is perfect.

Ingredients

  • 2 tablespoons olive oil
  • 1 small shallot, diced
  • 8 ounces mushrooms, sliced
  • 1 garlic clove, crushed
  • 1/4 cup white wine
  • 1/2 cup vegetable broth
  • 1 teaspoon cornstarch
  • 1 tablespoon parsley, chopped

Instructions

  • Heat olive oil in a pan over a medium flame.
  • Add the shallot and cook for around three minutes, mixing well.
  • Add the mushrooms and garlic and cook for around seven minutes.
  • Add the wine, vegetable broth, and cornstarch. Bring to a soft boil, mix and cook for seven minutes.
  • Lower the flame all the way and continue mixing and cooking for another 20 minutes or until the mushrooms have softened completely.
  • You can adjust the consistency of the sauce by adding more liquid or cornstarch. The liquid will make the sauce thinner and the cornstarch will make the sauce thicker.

Notes

These braised mushrooms can be refrigerated for up to four days.
