Garlic & Onion Whole Roasted Chicken

Ingredients

  • 1 whole chicken
  • 10 cloves of garlic, peeled
  • 4 onions, quartered
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/4 cup olive oil
  • 2 cups semi-dry white wine

Instructions

  • Preheat the oven to 350 degrees and place the chicken in a big roasting dish.
  • Stuff the chicken with as many of the onions and garlic that fit, and tie the legs together with cooking string to keep everything inside.
  • Sprinkle the spices all over both sides of the chicken and massage them in so everything is covered.
  • Pour the oil over both sides of the chicken and massage it in as well.
  • Place the rest of the onions and garlic around the chicken and pour the wine into the baking dish.
  • Cover the dish with foil and place in the oven. Bake for 1 hour and 45 minutes.
  • Remove the foil and turn the oven onto broil. Broil the chicken for around 15 minutes or until the top is golden brown. Make sure to check on it so that it doesn't burn as every oven is different.

Place the chicken in an airtight container or wrap tightly in foil and refrigerate for up to 4 days.
