London broil is essentially any large, tough cut of meat. It’s similar to flank steak and generally very lean. Recently it’s become quite popular because it’s budget-friendly and prices have sky-rocketed on everything including meat.

Once London broil is cooked it’s cut against the grain into many thin pieces which makes it a great option when serving a crowd.

To tenderize London broil before cooking it you marinade it as long as possible.

how do you cook london broil so that it’s not tough:

To avoid having an overly tough London Broil steak it’s important not to broil it for too long. An average London Broil needs around five minutes per side; however, you can adjust the cooking time as needed.

The most common texture for London broil is medium-rare which is around 125 degrees F. You can use a thermometer to check on the temperature and remove the meat as soon as it’s ready.

If you prefer your steak well done add another three minutes of broiling per side. Alternatively, you can cover the dish, and continue baking it at 300 degrees for around 25 minutes. This will soften the meat a little bit more.

Once you remove the London broil from the oven make sure to allow it to rest for 10 minutes. This will help the meat finish cooking and absorb the flavors. Lastly, cut the London broil thinly so that it’s easy to eat.

If you have leftovers you can add them to a salad. A steak salad is so delicious and can be eaten with warm or cold steak. As pictured above we added the steak to a salad with lettuce, red cabbage, corn, and chickpeas. And topped it off with a creamy tahini dressing.

Another great idea is making a steak sandwich. Add the leftover London broil to your favorite roll or sub, top it with some veggies, and a great sauce.

Ingredients

For the Spice Rub:

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon oregano
  • 1/2 teaspoon basil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

For the Marinade:

  • 2 pounds London Broil
  • 1/3 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1/4 cup soy sauce
  • 3 tablespoons brown sugar
  • 2 teaspoons Worcestershire sauce

Instructions

  • Add all of the spices to a small bowl and mix well.
  • Place the steak on a meat board or piece of parchment paper.
  • Using a pair of kitchen gloves, rub the spices onto one side, turn the meat over, and rub the spices onto the other side.
  • Place the meat into a big zip lock bag using a bag holder to keep it open.

  • Add all of the ingredients for the marinade to a bowl and mix well.
  • Pour the marinade into the bag with the London Broil and close the bag tightly, letting out any air that was inside.
  • Place the bag in the refrigerator and let it marinate for at least a few hours or overnight.
  • Take the London broil out of the refrigerator for around 30 minutes before it goes into the oven. Place it in a broil-safe dish or aluminum foil pan.

  • Preheat the oven to broil.
  • Broil the steak until the top has charred; around five minutes. Remove the dish from the oven, turn over the London Broil with a pair of tongs, and broil it for another five minutes.
  • Adjust the cooking time according to how you like your steak; for a rare steak cook it less and for a well-done steak cook it more.
  • Alternatively, you can cover the dish and continue baking it at 300 degrees for around 25 minutes. This will soften the meat a little bit more.
  • Allow the London broil to cool before slicing it and serving it. Once it's cooled, slice it into thin long pieces and top it with fresh rosemary.

Notes

Cooked London Broil can be refrigerated for up to three days and frozen for around two months. 
You can marinate the London Broil and freeze it before it’s cooked as well.
To reheat London broil that’s already been cooked, defrost it the night before and then place it in a 350-degree oven for around 25 minutes. 
To cook London broil that’s been marinated but not yet cooked, defrost it the night before and then follow the regular cooking instructions in the recipe.
