Ingredients

  • 10 medium-sized russet potatoes
  • 1 big onion
  • 6 eggs
  • 3/4 cup canola or vegetable oil
  • 1 tablespoon salt

Instructions

  • Wash and peel the potatoes. As you peel each potato, place it in a big bowl of cold water. (This will prevent the potatoes from browning.)
  • Preheat your oven to 400 degrees F.
  • In another big bowl mix the eggs, oil, and salt. You can also do this straight into the baking dish that you'll be using.
  • Peel and cut the onion into four big wedges.
  • Add the potatoes and onions to a food processor using any blade you'd like. (This recipe uses the shredding or "shoestring" blade.)
  • Transfer the grated potatoes and onions to the bowl or baking dish with the egg mixture and mix well.
  • Bake uncovered for 1 hour or until the top has browned and your house smells amazing!
  • Lower the temperature of your oven to 350 degrees, cover the kugel with foil, and cook for another hour.
  • Allow the kugel to cool for 30-60 minutes before serving.

Notes

You can refrigerate the kugel for up to four days and freeze it for up to three months. Just make sure to cover it tightly with foil either way.
